Roasted Salmon with Baby Root Vegetables & Horseradish Cream Sauce
Serves Four

Ingredients
8 small baby red beets, peeled
8 small baby golden beets, peeled
8 small baby turnips, peeled
12 medium baby carrots (whole carrots, not the processed rounded ones)
6 T. extra-virgin olive oil
4 7-ounce center-cut salmon filets
1 T. garlic, freshly chopped
16 oz. baby spinach
4 T. horseradish, freshly grated or prepared (or more to taste)
1 cup heavy cream
1 cup vegetable stock
2 T. fresh Italian parsley, chopped
Salt and pepper to taste

Method
1. In a large pot with water and salt, cook the baby roots separately (so colors won't run together) until tender. Remove with slotted wooden sppon. Cut each piece in half.

2. Place an oven-proof skillet over high heat for 2 or 3 minutes. Add 2 tablespoons of the oil then add the salmon, skin side up, and cook for approximately 1 minute. Turn the fish to the other side, then transfer skillet to a 500° oven and roast for 5 minutes (a little longer if you like your salmon well done).

3. While the salmon is cooking, place 2 tablespoons of olive oil and the garlic in a large sauté pan over medium heat, then add the spinach. Sauté until tender but not overdone. Squeeze the liquid out of the spinach.

4. Put 2 tablespoons of oil in a medium sauté pan and sauté the baby roots until golden. Remove from the heat and add the parsley.

Horseradish Cream Sauce
Mix the horseradish, heavy cream and vegetable stock. Reduce by one-third and season with salt and pepper. Transfer to a blender and process until the sauce is emulsified; set aside. If you want a finer sauce, without pieces of horseradish, put it through a sieve. The sauce can be made a day ahead; just heat and hand blend before serving. If the sauce gets too thick, thin it with water.

To set the dish: place the sauce on the bottom of the dish, the spinach in the center, the fish on top, and the root vegetables over and around the salmon.
