| Malfatti Dumplings in Fresh Tomato and Basil Sauce Serves Eight; six dumplings per serving Ingredients 2 bunches baby spinach 8 oz. ricotta 1/2 cup grated Parmesan 1/2 cup fresh buffalo mozzarella 1/4 cup pine nuts 1 cup chopped basil 2 eggs, beaten 1 to 1-1/2 cups flour |

| Method Combine spinach, ricotta, Parmesan, mozzarella, pine nuts and basil in blender. Put in a bowl and add beaten eggs and enough flour to form balls the size of large walnuts. Drop the dumplings into a large pot of boiling water; when they come up from the bottom, they are done. Serve with your favorite tomato sauce, Parmesan and sprigs of fresh basil.
